METHOD
Terracotta
Winemaking in terracotta amphorae does not impart aromas and allows for perfect micro-oxygenation, and is together with cement tanks, one of the company’s favourite wine vessels for the maturation of our wines. Terracotta allows for better wine evolution and contributes to the formation of aromatic complexity and aromas compared to other wine vessels.
Oak barrel
With the exception of Pentro, oak barrels are used for second and third passage and are only used for the maturation of some of the wines produced, in order to not influence their organoleptic profile in any way and optimise micro oxygenation.
The winery is characterised by numerous concrete tanks mainly grouped in the central part of the winery. Wine making in concrete tanks, which has recently become fashionable again, today represents one of our most frequently used wine processing methods.
Cement tank
Stainless steel
Stainless steel along with cement tanks, represents another frequently utilised winemaking method at the winery, namely for white wines. In the months preceding bottling, the wine is decanted from the concrete tanks to steel ones for greater control of the masses and to facilitate operations.
